Widespread in the Mediterranean area, from the Solanaceae family, it is characterised by its purple colour and oblong shape.
It is a source of vitamins B, A and C, minerals (potassium, phosphorus, sodium and calcium) and fibre.
It is low in calories, being composed of 90% water, making it ideal for low-calorie diets.
Among its benefits, it improves liver function, lowers uric acid and cholesterol levels in the blood, and has diuretic, emollient and laxative properties.
The long aubergine is extremely versatile and its possible uses range from aubergine parmigiana to fried and baked rolls to stuffed aubergines.
