Widespread in the Mediterranean area, belonging to the Solanaceae family, it is characterised by its purplish colour, globular shape, smooth surface and firm, fleshy flesh.
It has a strong flavour, somewhere between bitter and spicy.
It is a source of vitamins B, A and C, minerals (potassium, phosphorus, sodium and calcium) and fibre.
It is low in calories, being composed of 90% water, making it ideal for low-calorie diets.
Among its benefits, it improves liver function, decreases uric acid and cholesterol levels in the blood, and has diuretic, emollient and laxative properties.
The round aubergine is particularly versatile.
Excellent for cooking in the oven and stuffed, fried or roasted in many preparations.
