Widespread in the Mediterranean area, belonging to the Solanaceae family, it is characterised by its typical light purple colour with streaks and its oblong or globular shape.
It has soft flesh that is particularly tasty and quick to cook.
It is a source of vitamins B, A and C, minerals (potassium, phosphorus, sodium and calcium) and fibre.
It is low in calories, being composed of 90% water, making it ideal for low-calorie diets.
Among its benefits, it improves liver function, decreases uric acid and cholesterol levels in the blood, and has diuretic, emollient and laxative properties.
Thanks to its soft flesh, the striped aubergine retains little oil and is therefore ideal for baking, e.g. for recipes such as stuffed aubergines or aubergine boats.
